Creamy Tomato and Spinach Pasta

This dish has been a favorite in our household. It’s fast to cook up, easy to make, and a great way to sneak some spinach in for the kids! Very easy to please a crowd too, no matter how picky the eaters may be.

Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 small onion diced
  • 1 (15 oz.) can diced tomatoes
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • pepper to taste
  • ½ tsp salt
  • 2 oz. cream cheese
  • 2 Tbsp tomato paste
  • ¼ cup grated Parmesan
  • box of penne pasta
  • ½ (9 oz.) bag fresh spinach

Directions

1. Saute onion and garlic in olive oil until transparent.

2. Add the tomatoes, oregano, basil, pepper, and salt. Add tomato paste and 1/2 cup of water to the mixture and stir to create a sauce.

3. Add the cream cheese and parmesan cheese to mixture and stir until incorporated.

4. Boil penne pasta for several minutes and place to the side.

5. Add spinach to the sauce mixture and stir in. Let sit to cook for 3-5 minutes.

6. Combined pasta and sauce. Serve and enjoy!
