Tacos de Pollo a Herdez

This is a nice, simple, foolproof, yet authentic-tasting recipe that can be made with minimal effort for maximum taste. This recipe requires the use of a crock pot.

Ingredients:

  • 1½ – 2 lb chicken breasts, removed from bone
  • 1 16 oz. jar Herdez salsa. Red, green, and chipotle flavors are available and all of these will work.
  • Corn tortillas
  • Chopped red onion
  • Chopped cilantro
  1. Put salsa and chicken breasts in crock pot. Cook on low for 8 hours, or high for 4. For the most tender meat, opt for the low setting.
  2. Shred chicken breasts with two forks, retaining salsa. Transfer meat to bowl.
  3. Heat up corn tortillas, either on the stove or in a microwave.
  4. Take two tortillas and stack them. Place meat in tortilla. Garnish with red onion and cilantro.
