This is a nice, simple, foolproof, yet authentic-tasting recipe that can be made with minimal effort for maximum taste. This recipe requires the use of a crock pot.
Ingredients:
- 1½ – 2 lb chicken breasts, removed from bone
- 1 16 oz. jar Herdez salsa. Red, green, and chipotle flavors are available and all of these will work.
- Corn tortillas
- Chopped red onion
- Chopped cilantro
- Put salsa and chicken breasts in crock pot. Cook on low for 8 hours, or high for 4. For the most tender meat, opt for the low setting.
- Shred chicken breasts with two forks, retaining salsa. Transfer meat to bowl.
- Heat up corn tortillas, either on the stove or in a microwave.
- Take two tortillas and stack them. Place meat in tortilla. Garnish with red onion and cilantro.
