Juliet recently wanted to make a surprise baked product for Kate. Her original idea was to make banana bread, but since we didn’t have any old bananas on hand, but we did have some left over pumpkin mix, I figured it’d be a good idea for us to make a fall treat. I just took what I knew about breads and cakes and came up with this idea on the spot. It makes just enough batter to fill one loaf pan.
Dry Ingredients:
- 1¾ cups general purpose flour
- ¾ tsp. salt
- 1 tsp. baking powder
- 2 tsp. pumpkin pie spice
Wet Ingredients:
- 1 cup canned pumpkin mix
- 2 eggs
- ½ cup vegetable oil
- ⅓ cup of water
- ½ cup brown sugar
- 1 cup granulated white sugar
Preheat oven to 350°. Sift dry ingredients together in one bowl. Set aside. Combine wet ingredients in another bowl and whisk together just until they’re mixed. Add dry ingredients gradually, continuing to whisk. Once batter is mixed to a smooth consistency, add to greased and floured loaf pan. Bake for 50-60 minutes, or until wooden pick inserted in center comes out clean.
Optionally, serve with cream cheese or cinnamon cream cheese.
